Grape harvesting All grapes are hand-picked, and so almost exclusively by women.
Vinification The grapes are laid down in baskets, after having gone through severe sorting (removal of rotten or withered grapes). These baskets are then taken to the cellar, where they are emptied one by one, in stainless steel tanks, under a carbon dioxide atmosphere. The « intracellular » fermentation which is achieved in a wholly natural environmrnt (no addition of sulfur) lasts approximately seven days. The fermentation of the grapejuice into wine is thus achieved to a large extent within each berry, and so without any yeasting. After racking off the wine, alcoholic and malolactic fermentations are quickly completed and the cuvées coming from the more siliceous plots are ready for PRIMEUR selling after a slight filtration. It should be noted that this wine is subject to little or no chaptalization (depending on the years) and thus rarely exceeds 11.5°. No fining agent is used. Bottling is carried out all long according to the maturity of tanks. Since the amounts of SO2 used are very low, a filtration completely removing yeasts and bacteria is implemented at the time of bottling, in order to ensure perfect preservation of the wine's quality.
