Terroir and Grape
The 10 hectares of Melon de Bourgogne were planted on a plateau facing south and overlooking the Maine river.
Vines are 20 to 30 years old.
The schistous soil is giving to the wine a lot of character and minerality.
Wine making process :
The quality of the juice is preserved with a pneumatic and slow press. The wine is aged on the lees until spring, we use the technique of “bâtonnage” which gives more fruit and complexity to the wine. The bottling is made at the Chateau.
