Grape harvesting   Mechanical harvesting at optimum aromatic maturity.
Vinification  The grapes are crushed, de-stemmed and then tanked. Fermentation in stainless steel vats around 25 °. The duration of maceration (15-25 days) will be determined depending on the vintage and the potential of each plot and following the tasting. 
Maturing  The wines are aged for 12 months in tank with regular withdrawals to provide the oxygen necessary for the evolution of the tannins.
