Grape harvesting -
Vinification The grapes are picked at full maturity. Traditional vinification and ageing with destemming of the harvest. Maceration for 12 to 20 days depending on the type of grapes. The temperature is maintained at around 30° during fermentation : the must is pumped over the cap at least twice a day. The wine is then aged traditionally in our winery for at least one year before bottling at the château.
