Vinification | All the grapes are destemmed, and the wine-making takes place then in closed tanks, over a 2 weeks period. Extraction is made by daily pumping over. Fermentation temperatures are controlled and maintained between 82°F and 86°F/28°C and 30°C. After pressing and racking, malolactic fermentation takes place in stainless steel tanks. |
Maturing | Following the malolactic fermentation, the wine is drawn off and kept in stainless steel tanks in our air-conditioned winery at a constant temperature of 59°F/15°C. This allows it to slowly refine its structure. The bottling takes place after 8 to 12 months of maturing. |
