Vintage characteristic: Rainy and cold spring but without disease. Warm summer. Late and sunny harvest. A fresh and delicate vintage.

Vinification

Harvest at beginning of ripeness Harvest from 4h until 11h am to collect a fresh must (around 10°C)

Grappe de-stemming & crushing berries Skin maceration at cold temperature Bleeding vat and best press selection Racking of the must by cold temperature control (around 8°C)

14 days fermentation at low temperature (18°C).

Ageing on fine lees until January Filtration and grapes varieties blending
